The best way to think of food and beverage pairings are as snapshots in time, shaped not only by the wine itself and the food with which it resonates, but also the time of day you enjoy it, the weather, your mood, your companions, and even the slant of light illuminating the table where you are eating. There are, of course, many generalities that apply to food and beverage pairings but the more detailed the pairings are, the more ephemeral, too.
Each link here takes you to a full column, where I focus on the details of a specific wine, explore the various foods that work best with it, and offer a recipe to pair with it. Use these notes and the accompanying recipes for inspiration; it is not essential to seek out each specific wine–but if that is your passion, it is a fun thing to do, though many are no longer available. If you can’t locate a specific wine, try a later vintage from the same winery or the same varietal from a winery in the same viticultural area.
