Basic Mustard Vinaigrette
Directions
Put the shallot and garlic into a mixing bowl, add the lemon juice and a generous pinch of salt and set aside for 15 or 20 minutes.
Add the mustard and several turns of black pepper and whisk in the olive oil.
Taste and correct for acid and salt balance. Set aside until ready to use.
