Celery, Radish, & Onion Sauté

When you have good produce at hand, it's easy to put together simple side dishes, such as this one, perfect with risotto, roasted chicken, or creamy pastas.

  • Serves 3 to 4

Ingredients

  • 2 tablespoons olive oil
  • 1/2 red onion, cut into lengthwise strips about 1/4-inch wide
  • Kosher salt
  • 4 celery stalks, trimmed and cut into 1/8-inch-wide diagonal slices
  • 6 to 8 radishes, trimmed and very thinly sliced
  • Black pepper in a mill
  • 1 lemon wedge
  • 2 tablespoons minced fresh Italian parsley or snipped chives

Directions

  1. Heat the olive oil in a medium sauté pan set over medium heat, add the onions, and sauté until just tender, about 7 minutes.

  2. Season lightly with salt, add the celery, and sauté until it looses its crunch, about 4 minutes.

  3. Increase the heat to high, add the radishes, and sauté 3 minutes, tossing or stirring all the while.

  4. Season generously with black pepper, squeeze in the juice of the lemon wedge, add the parsley or chives, taste, and correct the seasoning. Transfer to a dish and serve right away.

Variation: Cut 3 or 4 strips of prosciutto, speck, or jamon serrano into 1/4-inch-wide crosswise strips and add to celery and onions with the radishes.
