Melon & Arugula with Black Pepper
When melons are ripe where you live, this salad makes a refreshing lunch or a light dinner on a hot night.
Directions
Put the arugula in a mixing bowl, season lightly with salt, and toss gently. Drizzle with the olive oil, toss again, and transfer to a platter.
Cut the melon in half, scoop out and discard the seeds, and cut the melon into wedges. Peel each wedge and cut into thin crosswise slices.
Scatter the melon over the arugula and season lightly with salt. Grind black pepper over the melon and the arugula and enjoy right away.
